And The White Flour Double Whammy
First, white flour's simple, high carbohydrates quickly raise blood glucose levels and contribute to unhealthy weight gain the above noted study classifies as a serious risk factor for terminal cancers – a matter of life and death.
Second, and likewise a matter of life and death, white flour is a chief component of the diet of the at risk overweight and obese, and carries another cancer risk. It has added manufactured vitamins replacing those of the whole grain, and including synthetic vitamin B1 in the form of mononitrate. Natural vitamin B1 found in the B complex in whole foods, is water soluble and designed to be expelled from the body when in excess. However, synthetic mononitrate is fat soluble and is instead stored in body fat as well as the liver. Accumulated in fat cells means that if discontinuing such it will not easily reverse the adverse effects of the chronic intake of synthetic vitamins whether from a bottle or white flour.2 This accumulation in the body eventually causes cellular toxicity, and can lead to severe liver damage and ultimately cellular toxicity. Nitrates accumulating in the kidneys are associated with kidney stones and cellular death.
Found also in deli meats, nitrates are converted to nitrosamine in the body. Most nitrosamines are carcinogenic (cause cancer). Other nitrosamine exposure causes insulin
resistance diseases and type 2 diabetes, non-alcoholic steatohepatitis, and Alzheimer's disease. 3
When I checked labels of manufactured foods at a local supermarket for mononitrate as the source of vitamin B1, without fail I found only one or two bakery products that did not list this very unhealthy additive to white flour. Many boxed and canned products listed it as an ingredient as well. Read lists of ingredients—better yet, avoid most foods with lists of ingredients and stay with the fresh, whole foods as the Creator designed them for satiety, proper weight, acute and continual healing, and optimum wellness.
Whether or not white flour is consumed—and most often it is eaten liberally in many dishes in cases of overweight and obesity—the above noted study raises a huge red flag for cancer risks in these groups. With 60% of Americans overweight or obese, this is indeed a very serious health matter. Recently a friend invited us to dinner consisting to a large degree of white flour. Our choice was to eat what we knew to be potentially very harmful, bring our own food, go and not eat, or not attend. While we would very much have enjoyed the company, we chose the latter. Prevalent in the US diet of commonly consumed man-made, faux foods—pastas, pizza, and breads in particular, although many processed and frozen foods contain both—is this corruption of whole food.
